Boulangerie Zimmermann in the Alsatian village of Schnersheim, France, had been in operation for 110 years and was being run by the fourth generation of Zimmermanns when husband and wife owners, Pierre and Michele, decided to move to Chicago to pursue a new challenge: opening a bakery in their favorite American city.

After selling Boulangerie Zimmermann in 2009, the family moved to Chicago and Pierre Zimmermann, World Baking Champion, began teaching L’Art de Ia Boulangerie at The French Pastry School where family friends Jacquy Pfeiffer and Sebastien Canonne, M.O.F., are the co-founders. While acclimating to the new culture, they began to plan their new bakery. At La Fournette, the Zimmermanns – with Pierre and his sons in the bakery and Michele directing Front of House operations – wish to recreate their family bakery in Alsace while making it uniquely Chicagoan.

As in the artisan boutiques that surround them at their Old Town location, they provide quality products that are affordable and accessible to neighborhood regulars and new visitors alike.
